Innovations in processing technology improve the efficiency of egg production. Advanced machinery and automation systems can handle eggs more gently and rapidly, reducing breakage and waste and thereby increasing the overall output levels. According to the Poultry Sector Morocco study by The Netherlands-African Business Council in 2022, the Moroccan egg products industry is relatively young, with only a few companies specializing in egg processing. These companies primarily focus on producing pasteurized liquid eggs. The majority of their products consist of whole egg pasteurization (84%), followed by egg white pasteurization (11%) and egg yolk pasteurization (6%). As of 2022, the combined processing capacity of these Moroccan egg processing companies was 15,000 tons per year. However, their actual production only reached 2,000 tonnes per year.
Technological advancements enable producers to better monitor and control the quality of eggs. One of the most advanced egg-processing techniques available in the market is the automatic breaking process. This technique minimizes egg losses, increases yield, and ensures proper separation of the egg white and yolk. Furthermore, processed forms of eggs, such as liquid or powder, are less prone to contamination and easier to store and handle from a health and hygiene perspective compared to shell eggs. They have a lower risk of spoiling, making them a more convenient option. Such innovations in egg production and processing drive egg production in the country.
Rising Trend of Dining Out in Restaurants Driving the Market
In the past few years, there has been an increasing inclination toward dining out in restaurants in Morocco. This shift can be attributed to rapid urbanization, longer working hours, and evolving family structures, which have influenced eating habits. The busy lifestyles of many individuals, particularly in urban settings, have made cooking at home a challenge, thus making dining out a more convenient choice for both individuals and families. Consequently, there has been a rise in the demand for poultry products in restaurants.
Moreover, restaurants offer various cuisines and culinary experiences that may not be easily replicated at home. Many Moroccans are increasingly interested in exploring different flavors, international cuisines, and new culinary trends. Chicken Tagine, Couscous with Meat, Kefta Meatballs, and Moroccan Grilled Meats, among others, are some of the meat-based dishes found in restaurants nationwide. Owing to this, demand for poultry products is expected to increase in the restaurants. The rise of foodservice establishments such as fast-food chains and quick-service restaurants in Morocco has contributed to the increased demand for processed meat products. These establishments often offer a variety of meat-based options such as burgers, sandwiches, and grilled chicken. The convenience and affordability of these offerings appeal to a wide range of customers seeking quick and accessible meals. Quick-service (QSR) and pizza foodservice establishments, including Pizza Hut, Domino’s, Mcdonald’s, Burger King, and KFC, have a strong presence in major Moroccan cities, which can contribute to the higher demand for poultry products. For instance, in 2022, KFC Morocco announced plans to open 10 new restaurants in Morocco in the year 2023 and invested USD 2.9 million for the expansion.
